Everywhere you go in the Oaxaca valleys, you'll come across fields of huge (or small and growing) agave plants. The source of the local favorite liquor, mezcal, each agave plant takes ten years to reach maturity. The leaves are then cut and the remaining center, called the pineapple, is harvested for the distilling process.
In the distance one of the downpours that come daily during the rainy season obscures the landscape.
